Ingredients
- Potatoes:
- 3 cups mashed sweet potatoes
- 1 cup brown sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1/2 cup almond milk (alternatively use rice or soy milk)
- 1/2 cup melted organic smart balance or earth balance
- Topping:
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup melted organic Smart Balance or Earth Balance
- 1 cup chopped pecans

Preparation
Step 1
Preheat oven to 350 degrees.
Grease a 1 1/2 to 2-quart casserole dish.
Combine sweet potatoes, 1 cup of brown sugar, eggs, vanilla, almond milk, and smart balance. Pour into casserole dish.
Mix together topping ingredients and sprinkle over the top of sweet potatoes.
Bake for 30 to 40 minutes.
