French Hot Chocolate (Chocolat Chaud)

    oz unsweetened baking chocolate, broken or chopped

  • 3

    oz semi-sweet chocolate chips

  • ½

    cup sugar

  • cups whole milk

  • 2

    cups heavy cream (can substitute half-and-half)

  • ¾

    tsp vanilla extract


Mix the chocolate, sugar milk and cream in a saucepan over medium heat. Use a wooden spoon to stir frequently until the chocolate melts and sugar dissolves. Cook to almost boiling. Remove from stove and mix in blender until smooth and frothy. (Be very careful when blending. Blend in at least two batches or you will have hot chocolate all over the counter.) Add the vanilla and serve immediately in warm mugs.
