- 2 tbsp olive oil
- 5 oz chopped prosciutto
- 2 large garlic gloves, minced
- 1 1/2 lb porkloin, sliced 1 inch thick
- 2 tbsp balsamic vinegar
- 1 lb chopped plum tomatoes
- salt & pepper

Step 1
1) Heat oil in skillet, add prosciutto and garlic. Cook over moderate heat, stirring, about 4 minutes. Transfer to plate.
2) Season pork with salt & pepper. Brown over high heat, 3-4 minutes per side. Put on plate and keep warm.
3) Add vinegar to skillet, scraping pan. Add tomatoes and prosciutto. Stir for 2 minutes. Season with salt and pepper and pour over the pork.
