Ingredients
- 1 T extra virgin olive oil
- 1 med. onion, pureed or very finely chopped
- 1 (8-oz) can tomato paste
- 1/2 cup mild salsa
- 1/4 cup orange puree
- 1/4 cup white bean puree
- 4 cups chicken broth
- 1 pound chicken meat, cooked and shredded
- 2 tsp lime juice
- salt and pepper
- garnishes: crumbled tortilla chips, shredded cheese, sour cream, corn

Preparation
Step 1
Heat oil over medium in a soup pot or Dutch oven. Cook the onions until slightly translucent, and then add the tomato paste, salsa, and purees. Stir for a minute, and then add chicken broth. Bring to a simmer for 10-15 minutes, stirring occasionally. Add the chicken and simmer for another few minutes. Add the lime juice and season with salt and pepper to taste. Garnish as desired.
