  • 2 Chayote aka Christophene Squash
  • 2 Tb Parmesan cheese, grated
  • 1/4 cup cheddar cheese, grated
  • 1 cup onion
  • 1/2 cup flour
  • 1 cup milk
  • 1/4 cup butter

Preparation

Step 1

Boil the squash in salted water until tender, about 15 minutes.

Cut the christophene in half and scoop out the inside. Discard the shells.

Meanwhile, saute onion in butter for about 5 minutes. Do not brown. Add christophene inside and mix.

Sprinkle flour, one tablespoon at a time to the mix, and add milk a tablespoon at a time until smooth and thickened.

Pour the mix into a buttered casserole dish and cover in cheese.

Bake until brown at 350F, about 15 minutes.
