Ingredients
- 150 grams Italian rice
- 100 grams ricotta cheese, mashed
- 25 grams grated cheese
- 3 eggs
- Parsley, finely chopped
- Salt and pepper
- Pinch nutmeg
- 100 grams mozzarella, chopped
- Flour
- Breadcrumbs

Preparation
Step 1
Boil the rice until tender. Let rice cool and dry for a few minutes.
In a bowl mix the ricotta, grated cheese, 2 eggs and parsley. Season well with salt, pepper, and nutmeg. Work mixture well until it comes together and add the mozzarella.
With wet hands shape the rice into samll walnut sized balls. Roll in the flour, then the beaten egg, and finally in the bread crumbs. Deep fry in medium hot oil until golden
