Ingredients

  • ½ t unflavored gelatin powder
  • 2¼ t cold water
  • ¾ cup low-fat buttermilk
  • ½ cup low or fat-free plain yogurt
  • ½ t vanilla extract
  • 2 T+2 t measurable Splenda

Step 1

Measure the water into a small bowl and sprinkle on the gelatin. Stir and allow the gelatin to dissolve – about 10 minutes. Try boiling water. Don’t heat milk…

Blend all. Pour into 6 to 8-ounce custard cups or ramekins. Cover with plastic wrap and chill at least 6 hours.

To serve, remove the panna cotta from the dish by running a small knife around the edge of each dessert and then dipping the bottom of each ramekin into a bowl of hot tap water. Invert on individual plates and remove the ramekins.



Variations – add lemon or orange zest; add ½ T instant coffee powder to boiling water; add ½ T cocoa powder to boiling water.
