Pigeon Pea Soup (Sopa De Gandures)

Ingredients
- 1 cup canned gandures (pigeon peas)
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 green pepper, chopped
- 6 cups water
- 1/2 cup regular medium or short grain rice
- 1 teaspoon salt
- 1 sprig Chinese parsley (Cilantro)

Preparation
Step 1
Mix pigeon peas, chopped onion, bell pepper, garlic and salt.
Let simmer for another 1/2 hour. Add rice and cook for 20 minutes. Add chopped parsley.
Serve while hot.
