Ingredients

  • 2 slices bacon, chopped

  • 2 small onions, chopped

  • 2 carrots, chopped

  • 2 clove garlic, minced

  • 2 teaspoons dried thyme

  • 6 medium potatoes

  • 2 lbs stewing beef

  • 1 cup beef stock

  • 1 cup tomato juice

  • 1 cup beer

  • 2 cups chopped cabbage

  • 1 teaspoon salt

  • 1/2 teasoppn pepper

Directions

In Dutch oven, cook bacon over medium heat; add onions, carrots, garlic and thyme to pot. Cook, stirring often, until onions are soft. Peel and finely dice half the potatoes. Add to pot and cook, stirring occasionally, for 5 minutes. Pat beef dry; add to vegetable mixture. Stir in beef stock, tomato juice, beer, cabbage, salt and pepper; bring to a boil. Cover and reduce heart to low; simmer 1 1/2 hours, stirring occasionally. Peel remaining potatoes and cut into bite-size pieces. Add to pot; cook, covered, for 15 minutes. Uncover and cook, stirring often, for 15 minutes or until meat is tender and sauce is slightly thickened. Adjust seasoning to taste.
