Ingredients

  • 2 cups whole wheat pastry flour
  • 1/2 cup Sucanat
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 ripe banana, mashed
  • 1 cup nondairy milk
  • 1 teaspoon vanilla extract
  • 1/2 cup choppcd walnuts
  • 1 cup apples, peeled and diced

Preparation

Step 1

1. Preheat oven to 350 Degrees F.
2. Combine flour, Sucanat, cinnamon, baking soda, baking powder, nutmeg, ginger and salt in a mixing bowl.
3. In a larger, separate bowl, mash the banana, and stir in nondairy milk and vanilla. Mix thoroughly. Add the flour mixture, walnuts, and apples. Mix to combine.
4. Spread into 9x9 nonstick baking pan and bake for 30-35 minutes, until a toothpick inserted into the center comes out clean.
