  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 tsp. cinnamon
  • 1 cup oil
  • 1 ½ cups sugar
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup walnuts, coarsely chopped

Step 1

Preheat the oven to 325 degrees.

Oil 2 9-inch pans. Sift flour, baking powder, baking soda, salt, and cinnamon. Take 2/3 of the sugar and add it slowly to the oil, mixing well after each addition. Beat the eggs until light and add the remaining sugar. Slowly add the egg mixture to the oil mixture and continue to beat until smooth and fluffy. Stir in sifted dry ingredients. Add carrots and nut and mix well. Bake 60 – 65 minutes
