Ingredients
- 3 ½ - 4 lbs. chicken
- 1 ½ cups buttermilk
- Salt and pepper
- 2 cups flour
- 2 tsp. salt
- 1 tsp. pepper
- 3 cups vegetable oil

Combine the buttermilk, salt and pepper. Coat the chicken and cover with plastic wrap and chill for 2 – 12 hours. Mix the flour, salt, and pepper well in a bag and add the chicken, shaking until the pieces are well coated. Let dry on rack 15 – 20 minutes. Heat oil to 350 degrees, cook chicken 10 minutes, oil should be at 300 degrees, then turn and cook pieces an additional 10 – 12 minutes. Drain.
