Braised Beef Brisket

Ingredients
- 2 tbs. oil
- 4 lb. beef brisket, tied
- 2 large onions, thinly sliced
- 1 clove
- 2 tbs. paprika
- ¼ tsp. thyme
- 1 tsp. chopped parsley
- 1 cup beer
- 2 cups beef stock, heated
- 2 tbs. cornstarch
- 4 tbs. cold water
- ¼ cup sour cream
- Salt and pepper

Preheat the oven to 350 degrees.
Heat oil in an oven proof casserole dish; sear beef 8 minutes on all sides over medium heat, remove from heat and season well. Add the onions to the pan and cook for 4 minutes. Stir in seasonings and parsley and cook an additional 2 minutes.
Pour in beef and bring to a boil and cook 3 minutes over medium heat. Replace meat in the casserole and add the beef broth; correct the seasoning and bring to a boil again.
Cover the casserole and finish cooking 2 – 2 ½ hours in the oven; meat should be very tender.
When done, remove the meat form the casserole and set aside.
Place the casserole over medium heat and bring liquid to a boil. Mix cornstarch with water; stir into sauce and continue cooking for 3 minutes.
Remove from heat, stir in sour cream and serve with meat.
