Ingredients

  • 1 – 2 cups fruit of your choice, chopped: fresh pineapple, plums, peaches, mango, or papaya
  • ¼ - ½ cup chopped red onion
  • ½ jalapeno, seeded, finely minced – optional
  • ½ bunch cilantro – leaves chopped
  • Salt
  • Cider or red vinegar, as needed
  • Splenda measurable sweetener

Step 1

Select the fruit of your choice. If desired, brush with olive oil, grill, and cool. Then fine chop. In a medium bowl, mix with onion, cilantro, and jalapeno (if using). Taste and adjust as needed, adding salt, vinegar, and Splenda to taste.

Serve with tortilla chips, Mexican chicken, roasted pork loin, or pan-seared tilapia.
