Pineapple Upsidedown Cake

Ingredients

  • 1/4 cup butter.
  • 1/2 cup brown sugar.
  • 1 can (8 1/2 ounce) sliced pineapples, drained
  • 7 maraschino cherries
  • 6 pecan halves
  • 1 1/2 cup cake flour or 1 1/4 cup all purpose flour.
  • 1 cup sugar.
  • 1 1/2 tablespoons baking powder.
  • 1/2 teaspoon salt.
  • 3/4 cup milk.
  • 1/3 cup shortening
  • 1 egg
  • 1 teaspoon vanilla.
  • 1 teaspoon rum.

Preparation

Step 1

Heat oven to 350 degree's.

Melt butter in 9 inch round layer pan.

Sprinkle brown sugar evenly over butter.

Place pineapple ring in center of pan.

Cut remaining slices in 1/2 and arrange with cut sides out around pan.

Place cherries in center ring.

Arrange pecans around center ring.

PREPARE CAKE BATTER

Bake 35-45 minutes
