While dining in a cafe in Arezzo, Italy I was served this fabulous dish and I couldn't wait to make this for family and friends. It is very simple and so delicous.

Ingredients

  • 1 whole, boned with skin on chicken
  • 1/4 cup chopped rosemary (4 sprigs)
  • 4-5 chopped whole garlic cloves
  • 1 whole lemon sliced thin
  • l whole lemon zested
  • 1 juice of whole lemon
  • 2 tbls olive oil
  • 1 tbls kosher salt
  • 1 tsp ground pepper

Step 1

Bone the whole chicken, but leave on the skin. (Ask the butcher to do it if it's easier)

Mix all ingredients in bowl and rub the chicken all over with the mixture. Place lemon slices in a shallow baking dish or large plastic bag and top with chicken. Slip some of the mixture under the skin of the chicken around the breast and let marinate for no less than 2 hours.

Grill on open flame for about 15 to 20 minutes on each side until juices run clear.

Roast in a 400* preheated oven for 40 to 50 minuntes or until juices run clear
