Pork Loin - Bacon Wrapped, Stuffed Pork Loin

Ingredients
- 31/2 lb. pork loin, butterflied
- 1 cup hot and spicy BBQ sauce, divided
- 1/2 poblano pepper, sliced into thin strips
- 1/2 onion, sliced into thin strips
- 6 jalapeno peppers, sliced into thin strips
- 12 thick-cut bacon slices

Step 1
Preheat oven to 350 degrees.
Place the butterflied pork loin flat and unrolled on a cutting board. Pour 1/2 cup of the BBQ sauce on the inside surface and spread evenly with a spoon to coat.
Arrange the strips of poblano peppers, onion and jalapenos over the entire inside of the pork loin. Roll the loin with the BBQ sauce, peppers and onion inside, and set aside.
Place 6 slices of bacon side by side on the counter. Weave, alternating 1 at a time, the additional 6 slices in between to form a basket weave. Pick up the pork loin with the fold side down and place on the bacon weave; pull the bacon up on the sides of the pork loin as far as they will go. Carefully roll the bacon and loin over and place it in a roasting pan.
Place the pan in the oven and bake for 2 hours uncovered. Remove the roasting pan and pour the last 1/2 cup of BBQ sauce over the bacon and return for 30 more minutes. When the pork loin is done, remove from the oven and let stand for 30 minutes, and serve.
