Ingredients

  • ¼ cup olive oil
  • 4 large chopped onions
  • 1 medium sized fresh red pepper
  • 4 minced garlic cloves
  • 2 large celery stalks, scraped and coarsely chopped
  • 4 lb. ground beef chunk
  • 1 tsp. oregano
  • ½ tsp. red pepper
  • 1 tsp. paprika
  • 1 tbs. Chili powder
  • ½ tsp. salt
  • 1 lb. tomatoes
  • 2 16 oz. cans kidney beans with liquid

Step 1

Heat ½ of the oil over medium heat and cook the onion, pepper, garlic, and celery 5 minutes. In a pot heat remaining oil and brown the ground beef. Add the cooked onion mix to the beef, and then add the seasonings and the tomatoes. Simmer 1 hour, then add the beans with liquid and simmer an additional 30 minutes.
