Ingredients
- 3 tbs. olive oil
- 1 clove garlic, minced
- 4 sprigs parsley, minced
- 6 1/2 ounces tomatoes, crushed
- Salt and pepper
- 1/4 tsp. oregano
- 4 thick slices prosciutto cotto
- 1 1/2 lbs. Mozzarella, sliced into 8 rounds
- 4 basil leaves
- Flour for dredging
- 2 eggs, beaten
- Breadcrumbs

Preparation
Step 1
In a skillet over medium heat warm the olive oil. Add the garlic, parsley, and crushed tomatoes, season with salt, pepper, and oregano and cook 20 minutes.
Cut the sliced ham and mozzarella so that they are the same size. Pass them through a pasta machine so that each piece is the same thickness, about 1/2 inch each. Place 1 piece of ham on top of 2 mozzarella sliced and top with 1 basil leaf; fold the sandwich in half and season and lightly. Dredge in flour, shaking off excess. Dip into the beaten eggs and then dip into the bread crumbs, making sure that they are closed tightly.
Over low heat warm 1 inch of oil. Carefully, lower the sandwiches into the hot oil and fry until golden.
