Ingredients
- 1/4 C Butter
- 3 Med. Onions - Thinly Sliced
- 4 Med. Potatoes - Peeled thinly sliced
- 1 Qt. Hot Chicken Broth
- 6 Pepper Corns
- 6 Whol Allspice
- 1 C Finly Chopped Celery Tops
- 1/2 C Heavy Cream
- Salt
- Pepper

Preparation
Step 1
Melt Butter in a heavy 3-4 Qt Pot. Add Onions and Potatoes and saute, stirring for about 5 minutes. Add next 3 ingredients and bring to a boil, cover and simmer for 30 minutes or until potatoes are tender.
Beat soup with wire wisk until potatoes are in small pieces. Add Celery tops and cream. Heat and season to taste with salt and pepper.
