Ingredients

  • 1 1/4 C Spring Water
  • 3 Tbls Dried Rosemary
  • 1 Tbls Honey
  • 1 Tbls Active Dry Yeast
  • 1 Tsp Salt
  • 4 Tbls Olive Oil
  • 2 1/2 - 3 C. Flour
  • 1 lg. Egg Yoke
  • 1 Tsp Water
  • Coarse Kosher Salt

Preparation

Step 1

Bring water to a boil and pour over rosemary. Let cool to luke warm and strain into large bowl.

Stir honey into wanter and sprinkle in yeast, let stand 5-10 minutes (foamy). Stir in salt, 1 Tbls Oil and enough flour to make it a kneedable dough.

Kneed dough on floured surface (5-8) minutes.

Coat Lg bowl with a few drops of olive oil, place dough in bowl, cover with a clean towel and let rise ~ 1 hour

Coat 14x12 baking dish (or 2 pie plates) with oil. Punch dough, pat and stretch to cover bottom of pan. dimple surface with your fingers.

Beat egg yould, 1 Tbls oil and 1 Tsp water, Briush over dough, drizzle remaining oil and rosemary and course salt overt dough - cover and let rise again for 45 minutes.

Preheat oven to 350 degrees and bake for 45 minutes.
