Ingredients
- 1 2 ½ to 3 lb. butternut squash
- 1 large carrot, coarsely chopped
- 1 stalk celery, coarsely chopped
- 2 cloves garlic, minced
- 2 tsp ginger, ¼ cup honey
- ¼ cup molasses
- 1 tsp. dried orange peel
- 1 tsp nutmeg
- ½ tsp cinnamon
- 1 cup chicken broth
- 1 cup apple cider or apple juice
- ½ cup sour cream
- ½ cup half and half

Step 1
Peel, seed and cube butternut squash. Cook in microwave oven with carrots and celery. . In 6 qt. Dutch oven combine cooked squash mixture with garlic, ginger, honey, molasses, orange peel, nutmeg, cinnamon, chicken broth and apple juice. Bring to a boil and simmer until all are tender. Mash all in pot. Blend in sour cream and half and half. Heat through. Top with bacon, celery leaves and/or Smoked Gouda cheese if desired.
