Ingredients
- 1/2 cup butter
- 1 cup carrots, grated
- 1 cup celery, thinly sliced
- 1/2 cup green onion, diced
- 4 cups chicken broth
- 3 cans (10 3/4 oz) cream of potato soup
- 1 lb velveeta, cubed
- 1 cup sour cream
- 1 pkg frozen, chopped broccoli, thawed and drained

Preparation
Step 1
1. Saute carrots, celery and onions in butter in large stockpot until tender.
2. Stir in chicken broth and potato soup. Heat over medium-low heat for 20 minutes.
3. Add cheese, sour cream and broccoli, stirring constantly until cheese melts, abotu 3-5 minutes. Reduce heat, simmer for 20 minutes.
