Ingredients

  • 1 Tbsp. Butter
  • 1 medium bell pepper, coarsely chopped
  • 1 medium red bell pepper, coarsely chopped
  • 3/4 cup sliced green onions
  • 3 cups water
  • 3/4 pound new potatoes, cut into chunks
  • 1 Tbsp. Chopped fresh or t tsp. Dried thyme leaves
  • 1/2 tsp. Salt
  • 1 cup half and half
  • 1/8 tsp. Pepper
  • 2 cans cream style corn

Preparation

Step 1

Melt margarine in dutch oven over medium heat. Cook bell peppers and onions in margarine about 3 minutes.
Stir in water, potatoes, thyme and salt. Heat to boiling reduce heat to low. Cover and simmer about 20 minutes or until potatoes or tender.
Stir in remaining ingredients; cook until hot but do not boil. Simmer aprox. 30 minutes on low heat setting. Serve.
