Ingredients
- 1/2 cup olive oil
- 1/4 cup finely diced red onion
- 1 large clove garlic, minced
- 2 Tbls. red wine vinegar
- 1 tsp. ground coriander
- Pinch cayenne
- 2 lbs. ripe tomatoes, various sizes and colors
- Sea salt
- 1 cup cilantro leaves, roughly chopped

Step 1
Spiked with coriander and cayenne, this easy salad is a fantastic way to enjoy the tomatoes that are hitting farmer’s markets right now.
Serves 6 to 8
Phase 3 (or Phase 1 with modification)
Prep time: 15 min.
Shake the first six ingredients in a jar to make the dressing. Slice the tomatoes thickly and arrange on a large serving platter. Just before serving, spoon the vinaigrette onto the tomatoes, sprinkle lightly with salt and scatter the cilantro on top. For Phase 1, just skip the olive oil.
