Ingredients

  • 1 lb breakfast sausage
  • 1/2 cup mushrooms, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 1 small tomato, seeded and chopped
  • 4 eggs, beaten
  • 1/2 cup half/half
  • 1 cup cheddar cheese, shredded
  • 1 frozen deep-dish pie crust
  • Salt/pepper to taste

Preparation

Step 1

Preheat oven to 400 degrees.

Brown and crumble the sausage. Add the mushrooms, onion, bell pepper and tomato. Cook until the veggies are soft.

In a large bowl, beat the eggs. Stir in the half/half and mix. Fold in the cheese. Season with salt and pepper. Add the sausage/veggie to the egg mixture.

Pour the mix into the unbaked, frozen pie shell and place on a cookie sheet. Bake for 45 minutes or until the eggs are set.
