Ingredients
- 1 cup whole grain or multi-grain shaped pasta – cooked
- 1Tblspn butter
- 1 Tblspn flour
- ½ cup chicken stock
- ½ cup buttermilk
- ¾ cup low fat cheddar cheese
- ¼ cup low fat swiss cheese
- Nutmeg
- Salt
- Pepper
- Bread crumbs
- Butter, melted

Preparation
Step 1
Cook pasta according to package directions and drain.
While cooking pasta, melt butter in a medium saucepan. Whisk in flour and cook for 1-2 minutes. Then, whisk in chicken stock and heat to a gentle boil. When sauce has thickened some, add the buttermilk and continue to heat so that sauce thickens. Stir in the cheese. Then add salt, pepper, and nutmeg to taste. Add pasta and stir to mix.
Mix the bread crumbs with the melted butter.
Divide into 2 oven-proof gratin dishes and sprinkle with the bread crumbs. Bake at 400° F for about 35-40 minutes, until bubbly and browned on top.
RETEST – flour 1 ½ T, chicken stock ¾ c, buttermilk ¾ c – needs to be a little creamier. Otherwise, was good.
And now that you’ve tried it “straight up” – try it with additions:
Sautee any, or all, of these in a little olive oil, then add to the pasta before adding the cheese.
Veggies – onion, small broccoli florettes, zucchini, peas, etc
Fresh spinach, rough chopped
Drained diced tomatoes, or fresh diced
Low fat smoked turkey sausage, diced
