Cheesy Potato and Apple Timbale with Shallots

Ingredients
- 2 small potatoes
- ½ apple, quartered, cored
- 1 small shallot, minced
- ¼ cup flour
- ½ cup finely grated low fat cheddar cheese
- 2-3 Tblspn low fat buttermilk
- Butter
- Fine bread crumbs
- Salt and pepper

Step 1
Cut rounds to cover the bottoms of two ramekins and fashion side liners from parchment paper. Lightly butter the paper and insert into ramekins. Cover sides and bottoms with bread crumbs.
Heat oven – 350 F
With a food processor, julienne the potatoes and apple. Place in a bowl. Add the shallots, salt, and pepper. Blend in flour in batches. It’s a look and feel sort of thing. Blend in the cheese.
Spoon the mixture into two prepared ramekins. Press lightly – do not pack. Pour 1-1 ½ tablespoons of cream into each ramekin. Bake for about 30 minutes. Should be lightly browned on top.
When done, remove the side liners and invert on plates, remove the bottom liner.
