Rice: Chip's Wild Rice Hotdish

Ingredients
- 1 cup wild rice
- 1/2 lb bacon, fried and cut into small pieces
- 1/2 cup eelery, chopped
- 1/2 cup onion, chopped
- 1/2 cup green or red bell pepper, chopped
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 can cream of mushroom soup
- 1/2 can milk

Wash rice thoroughly, soak for a couple of hours or overnight in water or chicken broth. Cook the rice in the water or broth later.
Put the cooked bacon pieces in a skillet and heat up. Add the celery, onion, bell pepper, salt and pepper and fry until the vegetables are about half cooked. Cook the wild rice in a large sauce pan, with enough liquid to cover the rice. Heat the rice to boiling and after a few minutes turn off heat, cover and let stand for another 10 minutes. The rice should now be starting to open up. Drain the rice and mix all of the ingredients together in a buttered casserole dish. Cover and bake for 1 to 1 1/4 hours at 350°.
Note: Better to use green or brown rice, rather than the dark black. The lighter colored rice will cook up much nicer.
Tips: Mix all ingredients together and let sit in the refrigerator overnight before cooking.
