Ingredients

  • 1 package cooked NO YOLKS
  • 1/2 cup olive oil
  • 2 Tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 3 teaspoon garlic, minced
  • 1/4 cup lemon juice
  • 1 1/2- 2 lbs. small shrimp, cleaned
  • 1/2 cup Parmesan cheese, shredded
  • 1 cup green onion, chopped
  • 1 tablespoon parsley, chopped

Step 1

Cook pasta according to directions, set aside. In a medium saute pan, place 2 tablespoons of olive oil over medium heat. Add 3 teaspoons of garlic and saute about 1 minute. Add the shrimp and cook until pink and thoroughly cooked. Let cool. Combine pasta with cooled shrimp, add green onion. In a separate bowl make the dressing by combining the 1/2 cup of olive oil with 1 teaspoon of garlic, lemon juice, and Parmesan cheese. Mix thoroughly. Toss parsley onto the pasta mixture, add the dressing, and toss together. Let cool in the refrigerator about 1/2 hour for the salad to season.
