Ingredients

  • 16 oz bag frozen peach slices, thawed – or 6-8 fresh peaches, sliced
  • ¼ c orange juice
  • 8 oz low fat ricotta cheese
  • ½ t vanilla
  • ¼ c measurable Splenda
  • 1 container light whipped topping, thawed
  • Fresh mint
  • 6 vanilla wafers, crushed

Preparation

Step 1

In a medium bowl, combine the peaches and orange juice. Set aside for about 30 minutes to let the juice infuse the peach slices.

Whirl the ricotta, Splenda, and vanilla in a food processor until smooth. Transfer to a medium bowl and fold in the whipped topping.

Pipe the cheese/cream mixture into 6 decorative glasses, top with the peaches and crushed wafers. Finish with just a little dollop of the cheese/cream mixture and a little sprig of mint.
