Spinach. Tomato and Feta Salad

Ingredients
- 3 1/2 Cups lightly packed young spinach leaves, torn into bite size pieces
- 1 med. Tomato sliced into wedges
- 2 Tbsp. Crumbled Feta Cheese
- OREGANO DRESSING
- 1/4 tsp. Salt
- 1/2 tsp. Dried oregano
- 1/8 tsp. Black pepper
- 1/2 tsp. Fresh lemon juice
- 1/2 tsp. Dijon mustard 1 Tbsp. Red wine vinegar
- 1/4 cup olive oil

Preparation
Step 1
1. Place spinach in individual salad bowls. Arrange tomato wedges on top in a spoke pattern. Pile cheese in center. Cover with plastic wrap and refrigerate.
2. Put all ingredients for dressing except for oil in a V2 pint jar. Cover and shake until salt is dissolved. Add oil and shake again.
3. Just before serving shake dressing and pour over salad.
This makes 2 servings.
