Ingredients

  • Marinade:
  • 1 c plain yogurt
  • 1 t ginger root, freshly grated
  • 1 t garlic, minced
  • 1 T curry powder
  • 1 1/2 pounds chicken tenders
  • 20 wooden skewers, soaked in water for 30 min.
  • Peanut Sauce:
  • 1 c smooth peanut butter
  • 1/4 c soy sauce
  • 2 t red chili paste
  • 2 T brown sugar
  • 2 limes, juiced
  • 1/4 c chopped peanuts for garnish

Preparation

Step 1

1) Combine yogurt, ginger, garlic, and curry powder. Toss chicken in the marinade and refrigerate for two hours. Skewer and grill.

2) Combine the peanut butter, soy sauce, chili paste, brown sugar, and lime juice in a blender. While pureeing, slowly add up to 1/2 cup of hot water to thin out the sauce as needed.
