Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup brown sugar
- 1 large egg
- 1 cup one-per-cent buttermilk
- 1/2 cup vegetable oil
- 1 tsp vanilla (or 2 depending on your preference)
- 2 cups diced rhubarb

Preparation
Step 1
Preheat oven to 375 degrees F.
Mix the dry ingredients together.
Beat eggs and then add milk and vanilla.
Pour this mixture over the dry ingredients and stir. Do not over-mix.
Fold in the rhubarb.
Sprinkle tops with brown sugar before baking.
Bake at preheated 375 degrees F for 26-30 minutes.
