Hallie's Jam Cake

This recipe was given to Donna's Aunt Hal from her friend Mary Bratton. This cake is a family tradition at Christmas time.

Ingredients
- CARAMEL ICING:
- 4 cups flour
- 4 eggs, separated
- 3 cups jam
- 2 cups sugar
- 2 teaspoons baking soda
- 2 1/2 cups buttermilk
- 1 cup butter
- 1 teaspoon vanilla extract
- 1 box raisins
- 1 cup nuts
- 1 box figs
- 1 teaspoon cocoa
- 1 teaspoon lemon juice
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 8 ounce candied cherries
- 1/4 cup butter
- 1/2 cup firmly packed brown sugar
- pinch of salt
- 2 tablespoons milk
- 1 1/4 cups confectioners sugar
- 1/4 teaspoon vanilla extract

Preparation
Step 1
Preheat oven to 325 degrees.
Combine flour, baking soda, and spices. Sift the flour and spice mixture.
Beat eggs yokes well.
Cream sugar and butter.
1. Add well beaten egg yokes.
2. Add flour mixtures.
3. Add milk, a little at a time.
4. Add remaining ingredients saving the vanilla and well beaten egg whites until the last.
5. Bake in 3-9" cake pans at 325 degrees for one hour.
Cool and top with Caramel Frosting.
To Make Caramel Frosting
1. Melt 1/4 cup butter in a sauce pan.
2. Stir in 1/2 cup firmly packed brown sugar and a pinch of salt.
3. Cook 2 minutes over low heat, stirring constantly.
4. Add 2 tablespoons milk and stir constantly until mixture comes to a boil.
5. Remove from stove.
6. Stir in gradually 1-1/4 cups sifted confectioners sugar.
7. Add 1/4 teaspoon vanilla extract and mix well.
If to thick, additional milk may be added.
