- 2 cups coconut milk
- 1 cup water
- 1 cup jasmine rice
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 pears, peeled, cored, sliced into wedges
- 1 tablespoon unsalted butter, melted
- 1/2 cup dulce de leche, warmed
- 1/2 cup finely chopped salted cashews, toasted
- Ground cinnamon, for sprinkling

Step 1
Bring coconut milk and water to a boil in a large saucepan over medium heat; whisk in rice, sugar and salt, cover, reduce heat to a simmer, and cook 30 minutes, stirring occasionally, until rice is tender and liquid is absorbed. Whisk eggs together in a large bowl; slowly whisk in half of the rice mixture until combined. Whisk rice-egg mixture back into saucepan. Cook over medium heat, stirring constantly, until rice starts to slightly bubble - about 2 minutes. Remove from heat and stir in vanilla until combined.
Heat oven to 400 degrees F. Place pear wedges on a cookie sheet and brush with melted butter. Bake 10-15 minutes or until tender.
Divide rice pudding into bowls; top with pear wedges, a drizzle of dulce de leche, and a sprinkling of cashews and cinnamon.
