Ingredients

  • 1 pound chicken breasts, skinned and boned
  • 2 tablespoons soy sauce
  • 1 tablespoon grated fresh ginger
  • 2 large oranges
  • 1/2 pound fresh spinach leaves, washed and drained
  • 1 tablespoon olive or vegetable oil
  • 1 red bell pepper, cut into julienne strips
  • 1 cup prepared Hidden Valley Ranch®
  • Original Ranch® salad dressing
  • 1/4 cup sliced almonds, toasted

Preparation

Step 1

Cut chicken breasts into 2 1/2 inch strips. In large bowl, combine chicken, soy sauce and ginger; cover and marinate 15 minutes.
Grate peel from oranges to measure 1 tablespoon. Peel oranges, including white membrane. Cut oranges into Winch slices. Line 4 individual plates with spinach; arrange orange slices on top.
In large skillet, heat oil until hot. Add chicken and red pepper; saute until almost tender, about 4 minutes. Add salad dressing and orange peel. Reduce heat and stir until liquid is reduced and chicken is tender. Spoon chicken and pepper mixture onto spinach and oranges. Sprinkle almonds over top and serve.
