Ingredients
- 1 1/2 cups chopped red onion
- 1 cup chopped red bell pepper
- 8 ounces ground sirloin
- 2 garlic cloves, minced
- 1 1/2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 19 ounce can red kidney beans, rinsed and drained
- 14.5 ounce can fire-roasted diced tomatoes
- 1 3/4 cups beef broth
- 12 ounce bottle amber ale
- 1 tablespoon yellow cornmeal
- 1 tablespoon fresh lime juice

Step 1
In a large dutch oven over medium-high, add onion, bell pepper, beef and garlic. Cook until beef is browned, stirring to crumble - about 5 to 7 minutes. Stir in chili powder, cumin, sugar and salt - cook about 1 minute. Add oregano, beans, tomatoes, broth and beer - bring to a boil, reduce heat and simmer 15 minutes. Stir in cornmeal - continue to cook for 5 more minutes. Stir in lime juice before serving.
Makes about 4 servings.
