Ensalada de Nopalito (Nopalito Salad)

This simple, peppy salad is a Christmas Eve tradition at our house. It is made from the leaves of the nopal cactus. Using bottled nopalito from the grocery store makes this a snap to prepare.

Ingredients
- 1 jar nopalito, drained and rinsed
- 1/2 hothouse (seedless) cucumber, peeled and diced
- 1/2 small white onion, peeled, sliced & soaked for 20 minutes in water and ice
- 1 large vine-ripe tomato, cored and diced
- 6 radishes, trimmed and sliced
- 3T extra-virgin olive oil
- 1 T red wine vinegar
- Salt and pepper to taste

Preparation
Step 1
1. In a serving bowl, place the red wine vinegar and 1/2 t. salt. Mix well to dissolve the salad. Whisk in the 3 T olive oil, and mix until well-combined.
2. Add the drained nopalito, cucumber, tomato, and radishes to the bowl and toss well.
3. Drain the onion and pat thoroughly dry with paper towels. Add slices to taste to the salad. Toss well.
4. Adjust the seasoning: add black pepper to taste; add more salt, vinegar, or olive oil if needed.
