This recipe is also fantastic with coconut oil substituted. If you want change things up, try craisins and white chocolate chips or peacans and butterscotch chips in place of chocolate chips.

Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 cup butter or shortening
  • 1 large egg
  • 1 1/4 cup rice flour
  • 1 cup corn starch
  • 1 1/2 tsp xanthan gum
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 package (2 cups) semisweet chocolate chips
  • 1 cup coarsely chopped nuts (optional)

Step 1

Preheat oven to 375 degrees F. Line 2 cookie sheets with parchment paper.

Cream together sugars, butter, and egg.

Add in dry ingredients (mix together in a separate bowl if desired) and mix just until blended. Once dough is stiff, stir in chocolate chips and nuts (if desired).

Drop dough onto cookie sheets leaving room for them to spread(1 1/2 to 2 inches). DO NOT PRESS DOWN.

Bake 8 to 10 minutes until light brown around edges. Let cool on wire rack until chips have hardened. remove from sheet and cool fully before storing.
