Ingredients
- 1 Tablespoon Olive Oil
- 1/2 medium onion; finely chopped
- 1 chopped carrot
- 1 clove garlic, minced
- 1/2 cup pearl barley (precooked)
- 3 pieces dried wild mushrooms, broken into pieces, soaked in 1/2 cup warm water for 1 hour
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 4 cups vegetable broth
- 1 cup spaghetti sauce

Preparation
Step 1
1. Heat oil in medium skillet over medium-high heat. Add onion, carrots, and garlic; cook and stir 5 minutes or until tender. Place in slow cooker.
2. Add mushrooms, liquid, salt, thyme and pepper to slow cooker. Stir in broth and spaghetti sauce.
3. Cover; cook on low 6-7 hours. Add barley at end.
Note: Add 2-3 more cups broth to make stew a soup.
