Ingredients
- 1/3 cup minced shallots
- 1/3 cup sliced green onions
- 4 cups thinly sliced cucumber, peeled & seeded
- 2 or 3 Jalapeño, seeded and sliced thin
- 1/2 cup rice vinegar
- 2 tablespoons sugar or Splenda
- 1/2 teaspoon salt
- 1/4 cup cilantro

Preparation
Step 1
Combine all ingredients except the vinegar, sugar and salt.
Combine the vinegar, sugar and salt in a microwave proof bowl and microwave for 45 seconds to 1 minute.
Pour over the cucumber mixture, toss to coat and serve.
