Ingredients
- 1 1/2 T oil
- 2 t garlic, finely chopped
- 1/2 large shallot, finely chopped
- 1 1/2 t fresh thyme
- 3 zucchinis, cut lengthwise, sliced 1/4 inch thick
- 1/2 red bell pepper, cut into 1 inch squares
- 1 T grated lemon peel
- 1 1/2 T lemon juice
- 1 Haas Avocado, peeled and cut into chunks

Step 1
1) Saute garlic, shallot, and thyme.
2) Add zucchini, pepper, and lemon peel. Cook 4 min. covered.
3) combine lemon juice with avocado in a small bowl and add to the skillet. Cook 2 min.
