Ingredients
- 3 Cups worth of mashed sweet potatoes (about 5)
- 1 Cup sugar
- 1/3 Cup milk
- 1 Stick butter
- 1+ Teaspoons vanilla
- Dash salt
- 2 Eggs
- Topping
- 1 Cup dark brown sugar
- 1/3 Cup butter
- 1/3 Cup flour
- 1 Cup pecan pieces
- 1 Cup coconut (optional)

Step 1
Boil enough sweet potatoes to make 3 cups worth of mashed potatoes. Boil with the skins on and peel afterward. Put potatoes in a large bowl with the milk, butter vanilla and the dash of salt. Add sugar to taste. Then beat in two eggs. Put mixture into a greased casserole dish.
Now make the topping. Stir dark brown sugar, 1/3 cup butter, flour and pecan pieces (also coconut if desired). Spread over top of mashed potatoes.
Bake at 350 degrees for 30 minutes
