Spiced Chocolate Lava Cake Cookies

Ingredients
- Dry Ingredients:
- 2 cups flour
- 3/4 cups Dutch process cocoa powder
- 1 1/2 tsp. cinnamon
- 1/2 tsp. black pepper
- 1/4 tsp. cayenne pepper
- 1/4 tsp. salt
- 3/4 tsp. baking soda
- Wet Ingredients:
- 3/4 cups butter, softened
- 1 1/4 cups white sugar
- 1 egg
- 1 egg yolk
- 2 tsp. vanilla extract
- To Roll Cookies:
- 18-24 chocolate truffles, halved
- 1/2 cup sugar
- 1 tsp. cinnamon

Preparation
Step 1
1. Preheat the oven to 350 F.
2. Combine the dry ingredients in a small bowl.
3. In a medium bowl, beat butter until smooth, add sugar and beat until fluffy. Add egg, egg yolk, and vanilla and stir to combine.
4. Sift dry ingredients into the wet ingredients and mix to fully incorporate the dry ingredients. Refrigerate the dough until firm, about 1 hour.
5. Combine the 1/2 cup sugar and 1 tsp. cinnamon in a small bowl.
6. Roll each truffle half in the chilled chocolate dough to form balls about 1 1/2 inches in diameter. Roll the balls in the cinnamon sugar mixture to coat and place on a parchment lined baking sheet.
7. Bake 12-14 minutes, rotating the cookie sheet half way through.
8. Cool about 5 minutes on the baking sheet, then move to a wire rack to cool completely.
