Ingredients

  • 1 cup cooked chickpeas (1 can)
  • 2 tab. olive oil
  • juice of 1 lemon
  • 1 clove garlic, peeled
  • 1/2 cup tahini (sesame seed paste)
  • 14/ to 1/2 cup water
  • salt and freshly ground white pepper to taste
  • Paprika

Preparation

Step 1

Place metal blade in food processor. Add chick peas, olive l and lemon juice to the processor and puree, plusng on and off. With machine on, drop garlic through feed tube and ulse on and off for another 30 seconds.
Add tahini to processor. Scrape bowl. Pulse on and off. Add water gradually. Season with alt and white pepper to taste. Garnish with paprika and serve with pita bread.
