- 6 egg yolks
- 1/3-1/2 cup sugar
- 3/4 cup marsala
- 1 tsp grated lemon peel
- ground cinamon
- vanilla extract
- 1 cup heavy cream, whipped
- strawberries, raspberries, or biscotti
place yolks, sugar in lg. round bottomed steel bowl. add grated lemon and cinnamon and a drop of vanilla. pour in the marsala.
half fill a pot with water, bring the water to a simmer, and reduce the heat to low. set the bowl on the pot, over the water. water should not touch the bowl.
whisk the mixture over the bowl until it triples in volume using a gentle even whisking.
continue whisking for about 10 minutes until it triples. Remove the container from the pot. Continue whisking for another minute of two. SHould be the consistency of mousse.
Serve warm, or cool. Whisk heavy cream until it whips, add to custard and fold gently together. reserve some of the cream for topping.
laddle into individual dishes, serve with berries and/or cookies.
