  • 6 peppers, red or green
  • 5 large tomatoes, peeled and cut
  • 1/2 cup olive oil
  • Salt and pepper
  • 1 tsp. cumin
  • 4 cloves garlic, minced
  • 1 tbs. parsley, chopped
  • olives

Preparation

Step 1

Set peppers under the broiler until blistered.

Place peppers in a plastic bag and close tightly. Sweat 15-20 minutes. Peel sins and cut peppers into slices. Place peppers in a bowl and add the tomatoes, and some olives.

Combine oil, spices, garlic, and parsley. Stir the oil mixture into the pepper mix. Cover and let stand at room temperature for 4 hours.
