Ingredients

  • Flour for dredging (enough for about 10 pieces of chicken)
  • 6 lbs. large chicken thighs
  • 4 eggs, beaten or egg substitute
  • 3 cups cracker crumbs (about 2 sleeves)
  • Canola oil for frying
  • 1 cup sugar
  • 1 cup light soy sauce
  • ½ cup sherry
  • 2 garlic cloves crushed
  • Cooking oil spray

Preparation

Step 1

Flour the chicken. Shake off excess. Dip chicken pieces in egg, then in cracker crumbs. Fry chicken in ½” oil until each side is golden brown. Remove and place on paper towels to drain.

Preheat oven to 300o .

Combine sugar, soy sauce, sherry and garlic in saucepan and cook over medium heat till sugar dissolves.

Line a large cookie sheet with foil and spray with cooking oil spray. Dip chicken pieces in the sauce, coat all sides and place on cookie sheet.

Bake for one hour, turning once.

Can be served hot or cold.

Note: Boneless skinless chicken breasts or thighs can be used. Adjust cooking time according to thickness of chicken.
