Ingredients

  • 1 C melted butter
  • 2 C brown sugar
  • 1/2 C sugar
  • 1 t vanilla
  • 1 1/2 t baking soda
  • 1 t baking powder
  • 1/2 t salt
  • 1 C peanut butter
  • 2 beaten eggs
  • 1/2 C chopped salted peanuts (after chopping)
  • 3 C flour
  • 1/2 C fruit jam

Preparation

Step 1

Melt butter, mix in sugars, vanilla, baking soda, baking powder and salt. Add peanut buter. Add eggs and add chopped peanuts. Add flour, 1 cup at a time.

Form into walnut size balls. If dough gets too sticky, chill for 1 hour.

Make an indentation in the center of the ball with your thumb. Spoon in a bit of jam. Make sure it doesn't run down the side of ball.

Bake till the tops are beginning to turn golden.

Cool on sheet for 2 minutes.
